Fluffy Cottage Cheese Pancakes

I love weekend mornings because that is the only time I would wake up, smiling to myself and thinking about what to cook for the family. This morning was just one of those days and I’ve been meaning to try out something new. I managed to get low fat cottage cheese and fresh basil leaves (this is for yet another recipe) from Carrefour yesterday.

I decided to whip up fluffy cottage cheese pancakes and serve that with spare ribs flavoured chicken franks for today’s breakfast. With honey and butter, the pancakes turned out moist and tender. Very yummy indeed.

Perhaps, I shall add blueberries and whipped cream the next time around 😉

Ingredients

  • 1 cup self-raising flour
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 4 eggs
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 2 tablespoons virgin oil (or Canola oil)
  • extra oil cooking spray

Directions

In a large bowl, stir together flour, salt and sugar.

In a separate bowl, whisk together eggs, cottage cheese, milk and oil. Add flour mixture to egg mixture and whisk until completely blended.

Spray a large skillet or frying pan with cooking spray then heat over medium heat. Working in batches, form each pancake by spooning about 1/4 cup of the batter onto the skillet. Cook, flipping pancakes once, until golden brown on both sides and cooked through, about 5 minutes total. Transfer to plates and serve.

You can serve the pancakes with maple syrup or honey, butter and even blueberries. Enjoy 🙂

Oh my, I’m back to blogging!

Soooo… welcome back everyone & ME!

This is officially my food blog. The reason why I decided to create one in the first place is solely because I love food and want to share tried and tested, successful recipes with you all. I have always loved to bake but all that I tried baking always ended up not nice. Don’t get me started on cooking; I was extremely hopeless.

But I have to admit that I am a foodie due to my upbringing and mom’s wonderful cooking. My dad is a fussy eater and food critic. And he actually enrolled my mom for baking and cooking classes when she became a stay-at-home-mom. That was the beginning of the family’s gastronomical affairs.

And recently, my interest in baking and cooking finally piqued after a long hiatus. Guess it started off with baking cupcakes (loads of ’em) and then cooking spicy fried kway teow courtesy of a friend’s recipe.

I got hooked on it just like my mom said,“Hati nya sudah terbuka.” In English, that means my heart has finally opened up to baking & cooking. Heh 🙂

Honestly speaking, it gives me a great sense of satisfaction and a tinge of happiness when I serve the family. Well, cooking over the weekend is a new found hobby for me. And to that, I say cheers to my culinary adventure! As always, I remain…
