Baked Potato

Every single time I eat at Wendy’s, I will always order the same thing — their Baked Potato! Such a simple dish but I love it nonetheless. And this dish is so flexible too, you can serve it plain with butter and cheese or sour cream and chives. This is a great complementary dish to any Western menu.

What I love about making it is there’s no need for deep frying or cooking over a stove. Just marinate the potatoes and bake them in the oven for an hour or so. Healthy living FTW (for the uninitiated, it’s For The Win)!

Ingredients

  • 1 large Russet potato
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon mixed herbs
  • Butter
  • Mozzarella cheese
  • Vegan soya bits
  • Chopped chives

Directions

Preheat the oven to 150 degrees Celsius.

Scrub the potato and pierce the skin several times with a fork. Rub the skin with olive oil, then with salt and mixed herbs.

Place the potato in the preheated oven, and bake for an hour or so until slightly soft and golden brown. Slice the potato down the centre and serve with butter and sprinkle Mozarella cheese over the top. Add the vegan soya bits and chopped chives, if desired.
