Slow-Roast Tomatoes, Goat’s Cheese and Mint Salad

I can’t be serving Orange Chicken Salad to my guests all the time, right? And so, I searched for another recipe which is relatively easy to make but not necessarily the ingredients to be found. I had to go to Carrefour and get all the ingredients but trust me, you’re in for a special treat. I’ve grown accustomed to making the Moonblush Tomatoes and this is such a lovely addition to any pasta or salad.

As for the salad, you can choose any of the ready mixed salad vegetables. Just ensure that you have plenty to go around.

Ingredients

  • 200 gm rocket or spinach salad (0r any salad vegetables)
  • 100 gm soft goat’s cheese
  • 1 batch of moonblush tomatoes
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh mint

Directions

Arrange the salad leaves in a large dish and then scoop out spoonfuls of the soft goat’s cheese and dollop it here and there. Add the cooked-down, intensely red moonblush tomato halves. In the same dish the tomatoes have been cooking in, whisk together the lemon juice and oil (add a little bit of sugar if you want to reduce the sourish taste) and pour over the salad. Scatter with the chopped mint.
