Banana Pancakes

What I love about pancakes is the flexibility of the recipe; you can simply add bananas or blueberries and VOILA! You have just created a fun twist on the ordinary pancakes. For those who have kids, this would be a fun activity for both the mom (or dad) and the kids. Get them to mash the bananas and help stir into the flour mixture. Get them to set the table while you cook the pancakes. I’m very sure this would be a very memorable breakfast for the family 🙂

And here’s the recipe, enjoy!


  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed


Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas. Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled frying pan over medium high heat. Scoop the batter onto the pan, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

I normally serve the pancakes with other side dishes such as BBQ chicken franks and scrambled eggs. Go get cookin’ aye 😉
