Sambal Goreng Pengantin

Selamat Hari Raya to all my Muslim friends and acquaintances 🙂

As promised, I will be sharing the recipe for Sambal Goreng Pengantin which I cooked on the eve of Hari Raya. The sis prefers this version as this contains no vegetables whatsoever. Purely meat and prawns! But you can always modify it and add other ingredients as well. And here’s the recipe, much easier as compared to the other one which I tried previously.


To be sliced thinly:

  • 3 – 4 onions
  • 3 garlic cloves
  • 10 shallots
  • 3 inch galangal (lengkuas)

  • 15 – 20 dried chilli, to be blended
  • 10 dried chilli, cut diagonally with scissors and soaked in water
  • 100 – 150 ml coconut milk
  • 1 – 2 cup water
  • 1/2 kg beef lungs, boiled and cubed
  • 1 /2 kg prawns, deshelled and leave tails intact

* You can add 1/2 kg beef meat and beef liver each. Boil these in a pot of water, add salt and a few slices of crushed ginger. Remove when the meat is tender.


Heat up oil in wok and stir-fry the dried chilli till it’s almost crisp. Then add the sliced ingredients and stir-fry everything till fragrant. Add the chilli paste and saute until the chilli is cooked. Add the beef lungs except for the prawns and mix everything. Over medium heat, add coconut milk, water, salt and sugar (to taste) and stir everything every five minutes. Ensure that the gravy dries up before you add the prawns.
