Chocolate Cornflake Macaroon

One of the readers, nigella fan, requested for one of my favourite cornflake recipes. My mom will always bake these whenever there are leftover white eggs. Without further ado, let me introduce you to Chocolate Cornflake Macaroon.


  • 4 oz egg whites
  • 6 oz caster sugar
  • 5 oz cornflakes
  • 9 oz chocolate rice or semi-sweet chocolate chip
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon vanillin


Beat egg whites, sugar and vanillin at high speed till fluffy for at least 10 minutes. Add in salt and vanilla essence and continue beating. Without using the mixer, fold in the cornflakes and chocolate rice/chip Β and mix thoroughly. Scoop the mixture into small paper cups and bake at 150 degrees Celsius for 30 minutes.

    hi there..wondering if the oven api atas or bawah aje for baking dis? thnx so much

      Hi Lin,

      I normally use both, api atas dan bawah. I will also use two racks and bake two trays simultaneously. And switch the trays, top & bottom, every 10 minutes.
