Thai Prawn Garlic Omelette

I’m always fascinated by the fluffy omelette whenever we dine at Al-Ameen or whatnot. My mom usually would fry omelette with either onions or crabmeat/otah-otah or all mixed together. And this is best eaten with nasi lemak or even with just plain rice.

But I remembered how the Thai folks would serve theirs with some sort of meat or seafood. I managed to find an authentic Thai omelette recipe which is really easy and this can be served with your normal day-to-day dishes or even when you’re in the frenzy Thai cooking mode. Here’s the Thai Prawn Garlic Omelette for that special gastronomical affair πŸ™‚

Ingredients

  • 2 eggs
  • 2 garlic cloves, finely chopped
  • 4 grey prawns
  • 1 tablespoon fish sauce
  • 1/4 teaspoon chicken stock powder
  • 1 teaspoon chopped coriander leaves
  • 1/4 teaspoon white pepper
  • 1 tablespoon oil

Directions
Clean the prawns, cut them down the back and remove the black thread gut. Remove all the shell and chop them into a fine mince.

Whip the eggs with chicken powder, white pepper, fish sauce, and chopped coriander leaves. Add the shrimp mince to the whipped eggs.

Heat the oil in a frying pan until hot, add garlic and fry until fragrant. Add the egg mixture and fry for 1 – 2 minutes on each side.

Serve it with piping hot rice and Thai green curry chicken. Be warned, you’ll be blown away πŸ™‚
