Orange Chicken Salad

I had a dinner date with Saudari Lee and Lynn Maharet at Badoque many moons ago. And I must admit, I love their Cold Chicken and Orange Salad at the first bite. As much as I’d like to frequent this cafe more often, it’s really too far for me.. it’s at Simpang Bedok. For a West Side girl, that is really far 😦

But lo and behold! I’ve noticed a couple of Twitter ladies uploading pictures of the Badoque inspired salad. And of course, I requested for the recipe. Much to my lovely surprise, it is very easy to make provided you get fresh ingredients for this wonderful salad. All thanks to Rinosque!

Ok, let’s get down to business.

Ingredients

  • 1 1/2 Baby head lettuce, cut into chunky pieces
  • Kraft fat free ranch dressing (or Kraft Miracle Whip)
  • Two chicken thigh meat, cut into 1 or 2 cm slices (rub both sides with 1/3 teaspoon salt, 1/3 teaspoon white pepper and mixed herbs)
  • 1 clove garlic, finely chopped
  • 1 can Hosen mandarin oranges in syrup
  • Vegan soya bits
  • Extra virgin olive oil

Directions

Toss lettuce with generous amounts of dressing. Set aside in fridge.

In a pan, heat olive oil and put in the garlic until fragrant. Add chicken slices and constantly stir so they don’t stick. Set aside after ten minutes.

Add the chicken slices and mandarin oranges (without the syrup) to the lettuce. Mix well and sprinkle the soya bits before serving.

Voila! The salad is ready to be eaten 😉
